3 vegan recipes perfect for Autumn!

We believe that nutrition helps a lot more than we tend to think. Specially during the Winter, when we get less sun, and more of those boring grey days that make us feel exhausted and cranky. Well, this year we want you to feel good, regardless of the weather!

And what happens when you feel good on a healthy Vegan diet? Nature blossoms! That’s right, we’re sure you already heard about the Amazonian forest disaster and that many other forests are being put down due to animal agriculture. We want to give you easy, healthy and delicious solutions that will put an end to these atrocities.

The beautiful food poetry we’re about to share comes from our lovely country, Portugal. Under the Portuguese warm sunlight, these women got inspired to cook and share Vegan wonders, for us to humbly try.

1 – Power Breakfast

If you are the type of person that, more than coffee, needs a proper breakfast to start the day with a bang, this recipe will make you excited to get out of bed every single morning.

Márcia Gonçalves, a nutritionist from the North of Portugal, creator of the compassionate cuisine blog  has you covered! We’re about to present you a chickpeas omelet that is to die for!

All you need is:

– 80g of chickpeas flour
– ½ tea spoon of baking powder
– 240 ml of water
– 1 spoon of olive oil
– ½ sliced onion
½ sliced zucchini
– 8 tomatoes cut in halves
– 1 tea spoon of Rosemary tea
– 2 spoons of chopped parsley
– 1 dash of salt and black pepper

2 – Comfort healthy food for lunch

The best comfort food for autumn, as the cold weather creeps in and all the leaves turn red. Despite of the global warming cold and sunny days, Halloween season is here! The streets are filled with dark yellows and reds outfits and we couldn’t love it more!

Ana Isabel, writer of the lovely blog Laranja-lima nutrição came up with Tofu croquettes and red beans. A meal that will satisfy you and energize you, can we really ask for more?

Ingredients for 4 portions:

– 500g of firm tofu
– 200g of cooked red beans
– 1 purple onion
– 1 spoon of soya sauce
– about 7 coriander leaves
– 2 tsp of olive oil
– Salt and black pepper

3 – A heartwarming dinner

To finish the day, we bring you the recipe of a dear friend. Filipa Neves da Silva is a designer and author of the blog, Panóplia, where she shares amazing plant-based recipes, amongst her exciting adventures around the world. If you want to feel healthier while getting inspiration from the beautiful treasures our planet has to offer, this is the place to go!

The Thai courgette soup is what Filipa recommends for the cold nights ahead:

Ingredients (for the green curry paste)

– 4 cloves of garlic
– 2 shallots (or a medium size onion)
– 5cm piece of ginger
– 2 lemongrass stalks
– 2-4 small (bird’s eye) green chilies (depending on how spicy you want it to be)
– Half a handful of coriander (approximately 30g)
– 1 tsp of ground cumin
– 2 tbsp of tamari

Ingredients for the soup

– 1 tablespoons coconut oil
– 2 shallots (finely chopped)
– 3 spring onion stalks (finely chopped)
– 2 cloves of garlic (finely chopped)
– 2 tablespoons of green curry paste (or less if you want it less spicy)
– A pinch of salt
– 1 can of organic coconut milk
– 6 medium courgettes, loosely chopped
– 235ml of water, (plus a bit extra if you prefer a more liquid soup)
– Juice of one lime
– Cooked brown rice (or other grain)
